A new season is upon us which means it is time for me to write a new wine list for fall/winter. Just like the last menu change, there is a process involved; first: I meet with my boss to see what he is willing to let me change, second: I make my own list of things I would like to see change, third: I reach out to my vendors to set up tastings, after all of the tastings I work through all the wines like pieces of a puzzle – strategizing regions, prices, flavors, pairings with the menu, and fairness between vendors. Then comes the day I present it all to my boss and hopefully get him to sign off on everything I put together.
Well my friends, today is that day where I’ve done the work and now I have to present it…if he approves (which I think he will) then I get to start formatting the lists (wine list for the guest rooms, BTG list, and the formal wine list for the dinning room) so we can print them and officially roll out the new list no later than the middle of next week. Wish me luck!
